Daniela & Charles Aquilina

Business Owners

You can say we are ITS lovers. That is where we met and started our relationship. We are now married with two kids and our own artisanal business tied to food and what we learnt there. We did not know each other before. We were both following the Food Preparation and Production course. That is where our story started and progressed. Part of our course entailed us travelling abroad for a year to train. We went to England and although we were not in the same place we used to make sure that we met. After we finished our course and qualified we returned to Bedford, England and worked there for 10 years.

Malta is lovely, but leaving an island and going abroad broadens your mentality. You meet people coming from different cultures, experiences that teach and mature you. Charles was and still is an Executive Sous Chef and I worked at Manor House where I had a number of positions that reflected my studies at ITS.We grew and matured together in our respective professions. The catering sector is not an easy one and you must empathise with each other. It involves long hours and a commitment which your partner needs to understand and support.

When we returned to Malta in 2016 we started a business called Oil & More, offering artisinal produce; oil, chocolate, delicatessen and other products. We love creating our own products according to the season. We always wanted our own business. We do most of our work overnight to make sure we cope with everything. It is also our quality time. We are proud of our genuine products made by ourselves. We know this work well and studied for it. After 18 years I returned back to Institute Of Tourism Studies - ITS. This time I attended the guiding course. I am the first Culinary Guide Certified Tourist Guide. My specialisation is Food Tourism. I offer food tours and tours about the history of food in our island. It is sought after and much appreciated by tourists.

I am a creative person. I learnt a lot from ITS and thanks to the services and the study packages it offers I grew and learnt. ITS gave us both the encouragement we needed. And I recommend studying at ITS to all those who love hospitality. We are pleased that we are making our dreams come true. Thanks also to the support provided by our families. Believe in yourself always and never take NO for an answer. This profession requires hard work. It needs long hours of preparation time. Behind every plate of food there is a long preparation time.
